BIG DOG Down!!

Well I've been trying to get my bike back on the road before winter but somethings up!
I had to get my valve guides redone because I was starting to blow smoke from the pipes. The shop that fixed the head said the intake seals on my valves where SHOT! So after getting all new valve guide seals installed, I was ready to reassembled my bike. The cycle shop said that he removed my restrictor plates from the head sand not to use them....?
So after getting everything put back together I started my bike and its running really rich! So I rejetted my carb to cure this. Although I was not able to get it dialed in....
So after that I replaced the restrictor plates and tried to readjust to exactly the same setup before I tore the heads off. But I'm still not able to get everything set up right! What would be so different from having the valve guide replaced that would cause me such a hard time getting everything back running right?
Could the carb be that much off after the head work????
I'm leaving for Thunder Beach next week and my bikes DOWN!

OMG! Usually when we say 'Bike Down' it means a wreck. Scared me!! Glad you are ok. Good luck getting your bike back up and running.

You said " So I rejetted my carb to cure this" so did you put in the old jets after you back the plates? The new jets are probably too big for the plates.

You could have left the restrictor plates out and came on here and asked first. We would have told you to leave the restrictors out and what jets did you put in it when the restrictors were out? Why did you re-jet? Did you add new pipes and exhaust? What, what, what? Need more input, more input, input, input says Johnny number 5.... :D

X2, get rid of the plates...

When I tore the heads off for rework I had a 31 inter. jet and a 76 main jet in the carb. After getting it back together, without restrictor plates, and it was running to rich so I changed the inter jet out with a 29.5 jet, and was still running rich. Thats when I put the restrictor plates back on to set the bike up exactly like I had it before taking the heads off. It was running good before I took the heads off for valve guides, except for the puffs of smoke from the bad valve guide seals.
Right now I have the strictor plates in and a 31 inter jet and the 76 main jet in....and at constant throttle at lower speeds (30 - 40 mph) it just doesnt run smooth, has a slight miss to the motor. Once I twist the throttle it GO's! What would be the best jets to run without the restrictor plates installed?????

The main question I can not figure out is WHY would the bike have all these carb issues and run so different when the only thing that was changed was new valve guide seals....??
