I installed the bombsight center piece in my E carb and know it won't run right. I have an S&S dual runner and hooker darkside radius pipes that are stepped to 2.5" so I thought it would help me not have to go with the G setup but now it runs worse I used to have a slight hesitation once and awhile at cruising speeds but know it wants to stall out between 2000 and 3000 rpm. It had a really small main jet .072 and I changed it to a .078 I think I should have just started with changing the main jet. I think it's that center bombsight piece that is messing things up so I am going to remove it and see what happens. But I think that I still want to switch to the Super G setup but not the xxx tazz I have heard lots of good things about the Ultima R1.IMO . I would not do it again. The carbs look great still to this day I can't get it dialed in.. not worth the $. Bikes going on a dyno tomorrow and will post more info. Imho don't waste your $ with xxx. Ripoff! My stock e performed much better

.031 the jets are what was recommended for the mean mothers pipes which is what I had previously had on the bike.What is your intermediate jet size?
You may want to try bumping up your intermediate jet. I had the same issue it would sputter between the 2600-3000 rpm. I am running a fairly large intermediate at .034 with a .68 main. The xxx is also modified with a setup similar to your bombsight centerpiece. Hopefully the shop I am taking it to can get it running great and I can post how great the xxx carb is. I know others love the xxx carb but I haven't been able to get mine running great..031 the jets are what was recommended for the mean mothers pipes which is what I had previously had on the bike.

It's at a local shop hopefully it's only a minor adjustment.Send you're carb to John Sachs and be done with it.
Mikuni carbs are supposed to be really good a lot of HD owners use them they are a flat slide 4 jet carb. I don't know how hard they are to tune. I have heard that it is as close as a carb can get to fuel injection. It costs between $500-$600 just for the carb and intake manifold let alone the labor if you want it installed then they will have to dyno it again and adjust the jets. So since you already have a good chunk invested in the xxx carb I would stay with it plus it's original equipment and mikuni's are Japanese.Dropped the bike off and they were trying to get me to shift to a mikuni carb. I have heard good things about mikuni but really want to stay with the s&s.
