The pig arrived in a box at the Butcher, we unpacked at home.


We proceded to prep on the Kitchen Counter, yes my wife was there taking the photos.


Here he is posing ( the pig, not me)- looks alive doesn't he


Had to split his spine to butterfly out


My Daughter helping to lay flat



Apple in the mouth for good luck


Injecting the Mojo Marinade- let it soak for 24 hours


The turning of the Pig in the Caja China roaster





Another hour to crisp the skin and here it is




And after the vultures have attacked- it was SOOOO Good...


Hope you all have enjoyed, this was my first pig and it was done just right. If you have a chance try one and see..

Man, the food that comes out of those Caja China boxes looks so good :zdrool:

Hoat did the Turkeys for the kids at school and now your pig.......I just might have to get one of those!!

Oh hell yes thats a great investment! I have done lots and lots of pigs turkeys , and with that box you can cook at least 30 chickens at the same time

Hey, I know for sure that I will be dreaming about that Wonderful looking Pig, while I attempt to eat that old, tired (DRY) overcooked Turkey that always seems to wind up on my Holiday Table. I Gotta get one of those cookers and try to explore a new Holiday tradition, Nice Job and thanks for sharing.

Very Nice.

I remember as a kid growing up we just dug a hole in the ground and covered it up with palm leaves and then the caja china was invented a it works awesome. My brother in law has one and swears by it!!

Damn that reminds me of home in Arkansas. We use to cook hogs and goats in the ground wrapped in tater sacks covered in bbq sauce and that would take all night but it was good. This china thing looks awesome. I'm definatly going to buy that. It will really help out because I know my wife would jump my ass for trying to dig a hole in the ground that we just had sodded. My memory is about as long as my pecker, how long did it take all together? Now I fry turkeys all the time for Thanksgiving and the way I do is in peanut oil and crab boil, makes an awesome cajun fryed turkey but I have to say you have just gave me a good idea that I dont have to do that samen thing every year and that I can pass to my buddies that live in the city lol. You dont have to dig a damn hole lol. F*ckin awesome bro. Thanks for sharing. Im hungry now.
