I have an idea, I haven't tried it yet but I was gonna use ear bud ear phones for navigation and music on my bike perhaps wired headset is the way to go run wire inside shirt and clip phone on belt a good set of ear buds should knock down wind noise too. If phone rings u wont be able to talk on it til u pull over but at least u can return the call promptly and still ride.

Get a GPS with bluetooth. It will display the call info in the screen. You can see if it is worth pulling over to return the call.

This is what I do when I am on call and commuting on the bike.

I don't take calls on the bike but I have a jawbone that works great in LOUD corvette and also my 62 Buick convertible with the top down. People on the other end don't hear the ambient noise.
