How about a snap button on the under sides of the collar, similar to the snap button that is at the top of the shirt?The only solution to the collar is either tuck it in when riding, looks retarded, or stitch it down like Chad mentioned... I'd go with a few stitches.

I have a couple of riding shirts that have this, and they work great.
I had the cleaners sew buttons on my shirt collar. Only cost $7.oo for two shirts.I like that idea... I'll look into that option.
