I have this round air cleaner on my carbureted 2003 chopper... do these “cone-shaped” ones actually make a difference in performance, or do they just look cooler? Also, would a K&N air filter (if they actually make them for motorcycles) be better than the factory one? Carb is SS super G.

The spike one would just be cosmetic compared to the one you have already, look at all the air flow you currently get compared to the cone one
What about any air filters that are better for performance?

This type, is the only one that I know of that will actually help with performance. Do a serch to find the one that will fit a Super G carb. I don't believe this one is it.

The only performance that thing was good for is my air compressor.

I've seen numerous dyno runs with the Forcewinder and they are one of the best ac's on the market, approaching zero restriction. They work so well that the Harley Heavy Breather and S&S Dual Runner are basically alterations of the Forcewinder design. Anything with a K&N type filter is going to flow pretty well though.

Sorry, no offense, I didn't like it. When I pulled it off, I put the stock S&S filter on and felt like it had a lot better low end torque. I picked up one of the cones from someone, and now I have a hesitation in second gear, if I roll on it to hard.

Those cone ac's are terrible. Some of them look nice, but if you're looking for performance, they are near the bottom of the list.
