Where I was going with this question is that I'm possibly going to change cams down the road and was not necessarily looking to have to change springs. I'm only interested in doing a minor hop-up but I do admit the desire to take it further is there.
I talked to the S&S techs in Daytona about the EPA cam thats in it now and I was pretty certain I remember him saying I would be good to go with up to a 600 S&S cam and not have to change anything else aside from a possible tweeking of the jet set.
I spoke to Carl of Carl's Speed Shop about using a set of their "special baffels" only, for an even lighter hop-up but he thought I would be much happier with adding a cam bump to it also. This I'm sure is a good low cost combination to get another 12-17 HP (his words) but I don't know enough about this subject yet to make an educated decision.
Now all that being said: I understand, at least I think I do what decking the heads mean. The end result is to decrease the piston distance from the top of the cylinder to gain compression. If I'm wrong please set me straight. I've heard the prefered method is to remove the surface from the bottom of the cylinder. Would this be correct in your opinion?
This whole port, polish, and flow test thing I'm in the dark on that one.

I may have missed some things here but this is my general understanding.
Minor porting - just matching up the intake manifold to the head intake ports so that it has no ridges at the connection. Also remove any casting ridges inside the port areas. Multi angle valve grind. Just kind of smooth things out for better flow.
Major porting - Could include more shaping of the port chambers, potential welding to change the shape of the combustion chamber and ports. Would likely include polishing and flow testing.
Polishing - Is just what it says but normally the exhaust ports are polished to a very smooth finish. The intake ports are left slightly ruffed up to promote fuel atomization, the theory being that a little turbulence is good.
CCing Heads - This is just measuring the exact volume of space in each heads combustion area (cubic centimeters). They should be the same, if not; some more has to be taken off of one of them.
Flow testing - Another test done with some specialty measuring equipment that tells you exactly how many standard cubic feet of air will flow through each head with a specific air pressure differential and valve opening. Again you want a matched pair.
It is nice to have a chart of what your heads can flow when deciding on a cam. Kind of a waste to put in a .650 lift cam if you’re maxed out on flow at a .500 valve lift opening.
