Ok so my pitbull is acting up when riding, it will just shut off on me. The first time it happened to me I thought I maybe hit the off button instead of the turn signal... But after it happened a few more times I knew I didn't hit the of button.

Any help from anyone? I can go on a 30/40 mile ride without a problem, stop for an hour or so then the ride back it will shut off.

Do you lose all power, meaning all lights go out? Or does it spit and sputter and quit and you still have electronics like lights?

Everything cuts off, motor, lights, electronics, everything. If I turn the key to the off position and back on while rolling and hit start, the bike stats up again. But it should be turning completely off on me.

It don't have to cool off, I start it right back up. I will literally be riding 45 MPH, bike shuts off, while I'm free rolling with no power I'll start the bike again as if it never happened. It's happened riding slower and faster as well

This could be a loose connection ? Or a fuel issue . I am leaning toward lose electrical connection

Start with the battery connections!
Look for any frayed wires that could make contact with metal with the vibrations from riding.
Check your jst connectors.

Possible Key switch also. Do you have anything hanging on your key ring? Also try this! Start the scoot and wiggle the key around (up and down and side to side) trying not to turn it to the off position. If the scoot dies by giggling the key, then you know it's the key switch
