re jet with stock exhaust help?

OK, I have a 2008 Mutt
2 into 1 supertrapp exhaust,
I cut out the extra cone in the baffle and put a open end cap on it. I now have the sound I am after. Loud but not open pipe loud.
I still have good low end but I do have some decel pop.
I would like to stick with the stock air cleaner assembly for now.
Does putting in a K&N filter help flow? Is the stock filter any good?
Should I put on one of those screen front plates on the air cleaner or just leave the front plate off? pros and cons of doing so?
When these decisions are made and final parts put on I will re-jet. From what I have read here I should probably just start with a .031 intermediate?
I don't have the $$ for a dyno tune just yet and I am still breaking the motor in.
I am not looking for max power but looking for the best running setup with a good exhaust note, I understand how bad it is to run too lean.

I have done basically what you have done. I am still in the process of tuning the carb. I haven't rejetted. What I have left is the stock end plate and the screen pipe inside the muffler. I removed the cone things also. It sounds good and I have some decel backfire. I may put 1 cone back in and put in a little packing to see if I can get some more backpressure and a deeper sound. I have the S&S high flow air filter also. I haven't done much with it for tuning yet because I just had surgery and am still recuperating from that, so it may be a while before I get to it. I too would like to get it on the dyno and see where it is at. Let me know if you get a good jet combination

I put one cone back in and about 70% of the outer packing material.
I measured the open end plate they sell and drilled mine with a hole saw.
I did run it around with and without the packing material, it sounds less tinny with it.
You could just take the end cap off and see if you like the sound.
