New problem need help

Now the starter is randomly engaging while running, has anyone else had this happen on a 04 pitbull

Do you mean When the starter is turning it spins then engages randomly ? Or do you mean while riding down the street it will try to engage ?
After you start the bike pull the wire off the starter solenoid and see if the problem goes away. If the problem goes away look for an electrical reason for the starter to be triggered during riding. If the problem stays, pull the starter and inspect it for some sort of mechanical failure causing the jackshaft to keep trying to engage.

When im riding down the road it randomly engages starter sometimes it does it 3 or 4 times and

By the time I get the bugs worked out of these bikes I'm going to owe you and a few others on here a few beers. lol

The problem stayed after taking the wire off. It's almost like the start button is sticking or not fully disengaging

The problem must be in the starter. The start button provides the signal to the EHC to provide voltage to the starter solenoid which intern activates the starter. It's not the start button sticking because you disconnected the solenoid wire. I would pull the starter and do a little investigating. just out of curiosity you might pull the end plate off the solenoid and make sure the spring that pushes the disc contact away from the two big copper contacts isn't broken or missing. It's possible the spring has broken and is letting the solenoid energize throwing the jack shaft into action, (or maybe not)
